INGREDIENTS
350g cherries, halved and pitted
480g Feta
60g rocket leaves
3 tbsp extra virgin olive oil
1 green chilli
1 tbsp balsamic vinegar
1 tbsp pumpkin seeds or your favourite nut and seed mix
METHOD
Arrange the cherries on a serving platter with the feta and rocket.
In a small bowl, whisk the oil with the chilli and vinegar; season.
Drizzle the dressing over the salad and scatter over the crushed pumpkin seeds or your favourite nut and seed mix.
Serve with the toasts or crusty bread.
