INGREDIENTS
1 1/2 cups Flour
1/2 tsp Salt
2 Tbsp Raw Brown Sugar
12 Tbsp Unsalted ‘cold’ Butter, cut into 1cm cubes
1/4 cup iced water
4 Goodness Me organic Royal Gala Apples, peeled, cored and cut into thin slices
1/3 cups sugar
1 tsp vanilla extract
1tsp cinnamon
2Tbsp unsalted butter, melted
1/8 tsp salt
1 egg, beaten
2 Tbsp Raw brown sugar
METHOD
Set oven to 180 degrees celsius.
Combine the flour, salt and sugar into a food processor and pulse. Add cold butter and continue to pulse for a further 5 seconds.until Pulse briefly to combine. Sprinkle over with iced water until just moistened and crumbly.
Transfer the dough to a lightly floured work surface and knead. Roll into a ball before flattening down to a disc.Dust with flour and roll to about an 8 inch diameter. Transfer to baking paper (make it large enough for your end pie to sit on) and pop in the fridge.
In a large bowl combine your sliced apples, sugar, vanilla, cinnamon, melted butter, and salt.
Take your dough from the fridge and roll to about 1/8 inch in thickness in a roundish shape (no need for perfection here) and lay on your baking tray (with the parchment underneath). Dust with flour and layer the apples on top. Fold the edges in around the apples – tucking them in for bed and pleating the edges. Coat the edges of the folded pasty with a beaten egg and sprinkle with raw brown sugar.
Pop in the oven and bake for 55 to 65 minutes (the apples will be tender and the pastry firm).
